To be honest I do try and make what I cook look slightly presentable in case I want to take a photo🤣 but sometimes things are tooo tasty not to post!
Try this aubergine bake! Low carb, super high protein, paleo friendly, gluten and dairy free & TASTY AF.
Ingredients (serves 2);
1/2 red onion
3 cloves garlic
100g grated carrot
75g red pepper
360g beef mince (I used a pack of 5% fat mince)
400g chopped tomatoes
1 x beef stock cube
1 aubergine
100g grated cheese (I used vegan cheese but mozzarella would be great!)
(Use whatever you want to season - I used dried rosemary, dried oregano, dried paprika, fresh parsley and a tsp marmite)
I pretty much made this like a lasagne, above is the ingredients I used for the ‘bolognese’ and then I cut the aubergine into really thin slices and did layers of aubergine, the mince and the vegan cheese. Repeat until you get to the top of your baking tray😄it tasted like a banging Greek mousakka and the macros per portion are so good😍👇🏽
