Chicken and broccoli korma🥦


Don’t be fooled by this bowl of deliciousness, I can take zero credit for it as I used a korma paste pot and a can of coconut milk AKA your toddler could make this dish. Nevertheless aren’t we all striving for easy, tasty, healthy dishes on this site? Good keep reading🤣

Ingredients (serves 2)
400g diced chicken breast
1 can coconut milk (I used reduced fat because that’s what I had in the cupboard but normal is thicker and a bit nicer!)
1 x Korma paste pot (I used Pataks)
1/2 chicken stock cube
125g tenderstem broc
Fresh coriander and flaked almonds
Pink salt and pepper
Then whatever rice you fancy - I actually used a bag of cauli rice with this as the gyms are closed I’ve slightly reduced my carbs during this lockdown period, it was really nice and only 40 cals for the whole bag🙌🏽

Put a tsp of coconut oil in your saucepan until it’s warm and then add your korma paste - this releases all the flavours as it heats it up! Once it’s looking nice and pasty add your diced chicken breast and season well. Mix together and once it’s slightly white all over add your broccoli (I chopped mine up - up to you if you do this!)
Mix it all together and crumble your 1/2 a stock cube in and a tiny dash of boiling water just so the pan doesn’t dry. Once the chicken looks pretty much white all over and all the broc is mixed in then add the can of coconut milk, shove a lid on and leave it for 20 mins. Top with coriander and flaked almonds ❤️
