Chilli chicken tacos 🌮


You have to try this perfect warming dinner!


You need (serves 2)
250g chicken breast
200g red kidney beans
10g tomato purée
1 chicken stock
Tbsp paprika
Tbsp ground cumin
Tsp chilli flakes (make it as spicy/mild as you want)
Pink salt and pepper

Preheat your oven to 180 degrees and boil your kettle. Put all the spices in a bowl and fully coat the chicken. Put a bit of oil in the pan and flash fry the chicken for about 30 seconds on each side and then put in a baking dish along with the 200g (rinsed) kidney beans, and the tomato purée and chicken stock mixed with 200ml boiling water.
Put in the oven for 25 minutes and flip your chicken over half way through.
That’s pretty much it! Once 25 mins is up get 2 forks and shred your chicken up!
I served mine with taco shells (obvs) grilled corn on the cob with paprika, salt, pepper and olive oil, fresh coriander, limes and grated mozzarella.
Save this and give it a go! It really is minimal effort but such a good fajita or beef taco alternative!🌮

(Per portion inc. 4 taco shells, 1/2 the chilli chicken and 2 corn on the cobs).
