Dark Chocolate & Blueberry Banana Bread๐Ÿ˜๐Ÿซ๐Ÿ‡๐ŸŒ๐Ÿž



So itโ€™s taken all of my will power to only have 2 giant slices. The texture is gooey but not wet and dense but not heavy...if that makes sense๐Ÿ˜‚
I didnโ€™t use any refined sugar in this so you donโ€™t get that sugary feeling in your mouth (you know the one?) which is probably why I could eat the whole thing in one go๐Ÿ˜‚๐Ÿคฆ๐Ÿปโ€โ™€๏ธ

I just used a tablespoon to measure out all of the ingredients cos it was a complete wing it scenario, so grab a spoon and add the following to a bowl (wet first and then dry)
3 ripe bananas(mashed)
2 eggs(whisked, obvs)
2 tbsp plain soya yoghurt
1 1/2 tbsp melted coconut oil
2 1/2 tbsp light honey
Dash of vanilla extract
8 heaped tbsp plain flour
2 tbsp coconut flour
2 heaped tbsp coconut sugar
Tsp cinnamon
Crack of pink salt
Tsp baking powder
70% dark choc (used about 45g)
Blueberries (roughly 70g)

Line a bread tin with baking paper and bake on 180 for 40 mins.
Donโ€™t open the oven but keep checking on it, or just sit and watch it bake like I did๐Ÿ˜‚๐Ÿ˜‚๐ŸŒ๐Ÿท Enjoy!
