CRISPY SWEET CHILLI CHICKEN🌶

If you love going out and having sweet and sour chicken at a restaurant THIS is for you!

It was super simple and only required a few ingredients!

Ingredients (serves 2)
2 chicken breasts
Cornflour
1 green pepper
1 red pepper
1/2 white onion
1 clove garlic
75ml sweet chilli sauce
20ml mirin seasoning or white wine vinegar (to be honest this was just to loosen the sauce so a tbsp water would probably be fine too!)
1 lime
1tbsp soy sauce

Slice up your peppers into thin strips, onion into chunks and finely slice your garlic and throw it all in a frying pan on a low heat.
Put some cornflour in a large bowl - I didn’t measure it because you just need as much as will stick to the chicken.
Slice up your chicken into really thin strips and pat try with some kitchen towel, season with salt and pepper, then toss in the cornflour then lay the chicken back out on some kitchen towel.
I shallow fried mine in hot coconut oil but use whatever oil you prefer! I used about 1 1/2 tbsp. The goal is to make sure the chicken is all golden and crispy!
Mix the sweet chilli sauce and 1/2 lime juice, tbsp soy sauce and tbsp mirin seasoning or white wine vinegar. Mix it up and when your chicken is golden all over pour over the sauce, add your peppers into the pan and let it reduce and bubble with the chicken and peppers like a glaze!
Toss it around for a minute or so and then serve! I had it with basmati rice and topped with some sesame seeds. Let me know if you try it!
