This is the epitome of comfort food🤤🤤one of my absolute faves and whether you’re vegan or not, you have to give this a try!

Serves 4
Ingredients;
1/2 large red onion
2 carrots
1 courgette (I used a yellow courgette)
1 red pepper (I used 3 mini ones!)
1/2 red chilli
2 cloves garlic
100ml red wine
1 veggie stock cube
1 bag (250g) merchant gourmet cooked lentils
400ml bolognese sauce (you can use chopped tomatoes if you want, I used a pre bought sauce which was 340ml, and I added extra water)
Paprika
Fresh parsley
Pink salt and pepper
Spaghetti of your choice (I used wholegrain spelt spaghetti)
There isn’t a particular method to this! I did the onion and garlic first, and then cooked off the red wine. Then added all the vegetables (you can add whatever veggies you want!) I added the carrot, then the courgette, pepper and chilli. Add your paprika and salt and pepper. Once it’s softened add the veggie stock cube and about 50ml water. Simmer for a few minutes and then add your sauce, simmer for around another 10 and then throw in your lentils. Simmer for another 5/10 mins, add some fresh parsley and youre good to go! I had this with spelt spaghetti and the macros were👇🏽
