I literally have an obsession with giant cous cous, if you’ve never tried it 100% add it to your next shopping list! You can use regular cous cous and it would work the same but I highly recommend giving this a go! Super healthy, vegan friendly, and you can have it on its own or with some source of protein on the side.
Ingredients (serves 2)
150g wholeweat giant cous cous (I used merchant gourmet)
1 veggie stock cube
100g cucumber
30g pomegranate seeds
Handful fresh mint
Handful fresh coriander
Flaked almonds
Fresh lime
Super super simple! Cook your cous cous as per packet instructions with your stock cube. Chop up all the rest of your ingredients and when your cous cous is cooked just stir it all in!
A perfect easy side dish for your dinner parties (lol remember those?)
