Prawn and courgette risotto🥒


You won’t be surprised to know this was a total wing it scenario, but with a risotto you need to pretty much man your pan at all times and gradually add your stock as the rice soaks it up!


Serves 2
1/2 white onion
2 cloves garlic
150g arborio rice
150ml white wine
350ml water & stock cube
100g grated courgette
1 lemon (juice)
Lemon zest
160g raw king prawns (1 pack)
Fresh parsley
Parmasen
Dried chilli
Paprika
Salt and pepper

The most important part is the beginning, cook the onions for a few minutes in some olive oil and then add the garlic and the rice. Let it all soak and dry up a bit and then add the wine. Once the rice has soaked up all the wine start adding the stock gradually and your other ingredients bit by bit. The prawns can go in when all the water is in and they only take a few mins to cook.
Top with extra parmesan and fresh parsley ❤️ vague but I hope it makes sense, take about 30 mins in total!
