Prawn Satay Skewers and Sticky Coconut Rice🍚🍤


Uhhh YUM🤤 I know I say everything is my favourite food but, it’s because it is😂 pretty much chose my favourite source of protein (prawns) carbs (sushi rice) and fats (peanut butter) and came up with this dreamy dish!

Ingredients (serves 2)
150g sushi rice
2 packs raw king prawns (est. 150g each)
240ml coconut milk
50g peanut butter
20g honey
10g soy sauce
1/2 lime
Sesame seeds to garnish
Any salad you fancy (I used watercress and cucumber)

The easiest method EVER. Put 150g sushi rice in a pan. I used a cup measurer which was 1 cup rice, 1 cup water and 1 cup coconut milk. (So do roughly 150g rice, 150ml water and 150ml coconut milk - I just used alpro by the way! Can use canned if you fancy, it’s probably better but I was trying to cut some cals☺️) cook the rice as per packet instructions.
Combine the following for your satay sauce;
50g smooth peanut butter
90ml coconut milk
20ml honey
10ml soy sauce
1/2 lime juice
Salt and pepper.
You don’t necessarily have to skewer your prawns but I did it for the gram (just being honest🤣) just cook them in a frying pan for 2 minutes on each side. Heat your sauce in the microwave for a minute.
The rice needs frequent stirring as it’s sticky! Once it’s done add to the plate with whatever salad you fancy, top with your prawns and pour over the sauce, add any garnish you fancy. I hope that does justice to how easy this dish was!
