SALMON BURGERS ๐ ๐
Oh my god these are amazing! So so easy and I was so happy with how they turned out. Also super quick to make so hereโs a great #10minutemeal for your weekday eves๐
You need (serves 2)
2 salmon fillets
Small handful of fresh dill
Small handful fresh parsley
1 egg
1/2 lemon juice
1/2 lemon zest
15g panko breadcrumbs
Pink salt & pepper
Remove the skin from your salmon and I sliced it into thin strips length ways and then into small cubes, basically you want to mince the salmon into tiny little chunks, then go over with your knife again. Then simply add all the ingredients into a bowl! (With your herbs finely chopped as well)
Roll into 2 flat circles and pan fry in olive oil for about 4 minutes on each side.

I had mine in a seeded bun with lettuce, shredded beetroot, mayonnaise, and an avocado salsa. With some sweet potato on the side. But have it with whatever you want! Highly highly recommend, if you like salmon you will love this!
