Salmon Fish Cakes 🐟🥔


This is such a good recipe to have in your locker 😁 super healthy, fun to make and the macros are sick🙌🏽 I had 2 of these for lunch yesterday with a cucumber, yellow pepper and avocado salsa that I made and it was the perfect lunch in the sun!
Ingredients;
(Makes 6)
380g new potatoes (roughly peeled)
2 cooked salmon fillets
25g mozzarella (optional)
Juice of 1 lemon
Fresh parsley
Fresh chives
1 egg
Salt and pepper

Boil your potatoes for 20 minutes, drain the water and mash them up. Then simply add all the other ingredients and mash it all together (make sure there’s no skin on the fish - I used already steamed skinless salmon fillets) then with your hands roll the mixture into the correct shape and coat in a mixture of;
Ground almonds
Breadcrumbs
Oregano
Salt and pepper (you can coat them in whatever you’ve got, make your own breadcrumbs or just use ground almonds and seasoning to make them GF)
Then you can either cook them straight away or leave them in the fridge until you want them! They just need about 5 mins on each side in a frying pan.
