Spanish Seafood Paella🥘 🇪🇸


The perfect quarantine meal! Especially if you’re isolating with roommates or family, this is the ultimate crowd pleaser (with minimal washing up💁🏻‍♀️) I love making this so much that I once made one of my friends go on ITV dinner date and gave him the recipe🤣 (he won, and I know it’s not because of his personality so 👉🏽🥘)
Ingredients (for 2);
- 60g red onion (half a red onion)
- 3 garlic cloves
- 150g pepper (I did 75g red pepper & 75g green)
- 150g paella rice
- 2 tsp paprika
- 80ml white wine
- Pinch of saffron (important ingredient!)
- 1/2 litre of veggie stock
- 165g raw king prawns (1 pack)
- 150g scallops (I used raw mini scallops)
You can use whatever protein you want! Chorizo is always a fave in paella and makes it a lush colour but I don’t eat pork so🙃🙃
- 1/4 Red Chilli
- 1 lemon - Chopped Parsley

The best part about making paella is you do it all in one pan, there are only a few key things to note which il mention below!
Add your onion to the pan first and cook for about a minute, add your crushed garlic and then your diced peppers and cook for a few more minutes. Then add 1 tsp of paprika and stir it all around. At this point add your rice to the dry pan and let the rice absorb all the flavours of the paprika and garlic, when the pan is really dry add the wine and let it cook away. Then start gradually adding the stock. You want to keep adding liquid in small sections and let the pan go dry before adding more. You have to man your pan the whole time! Add the other tsp of paprika and the saffron throughout the adding water and stirring process m. Add 1/2 juice of a lemon (the other half is for garnish) and add some chopped parsley and save the rest for garnish. Add the chilli. Salt and pepper this bad boy like you’ve never seasoned before😄 when the rice starts to taste nearly cooked, add your seafood and cook it all through together for 5 minutes. I added my last 200ml of water just before I threw the seafood in. Hopefully this makes sense! It’s a very therapeutic process of watching the rice absorb all the water before adding again! 💁🏻‍♀️🇪🇸
