I’ve been dreaming all week of being on my annual family trip to Majorca and craaaaved one of these 🤤 I’ve never made one before but thought it’d be pretty simple which it was!
Ingredients;
(Serves 3)
450g potatoes
1 red pepper
6 eggs
Olive oil
Fresh Parsley
Fresh Chives
Salt and pepper
(You can actually add whatever you want into it - as long as you have the eggs and potatoes! It would be really good with 1/2 white onion but I’m just not the biggest onion fan🤣 but I’d suggest adding it in!)
Peel and finely slice your potatoes, either put them in a bowl with clingfilm and microwave them until soft or you can do what I did which was shallow fry them in a cup and a 1/2 of olive oil (this defo made the flavour amazing!) once they’re soft then drain the oil out and put your potatoes to one side.
Fry your peppers and whatever else you’re adding in a medium/small pan (this will be the shape of your tortilla)
I also added the fresh herbs once the peppers were soft. Whisk 6 eggs in a bowl, add your potatoes into the eggs, along with salt and pepper, then pour into the pan with the rest of your ingredients. I roughly cooked this on a low heat for about 5 minutes using a spatula to make sure the edges weren’t sticking, then put it in oven for another 5 minutes until I could see it was cooked through on top. Once it’s out of the oven, put a plate on top of the pan and flip it onto the plate (use an oven glove!) leave for about 15 minutes before cutting it up and eating it☺️
