SWEET POTATO AND BEAN BURGERS 🍔


An actual fibre overload in this meal🤣 I desperately need to do a food shop but I always have some rogue vegetables in the fridge and some random tins in the cupboard (who doesn’t?)
You can make so many combos of veggie burgers! (check out my fave courgette and halloumi burgers on the recipe page!😅)


For these I used;
250g steamed sweet potato
120g red kidney beans
1 egg (I was going to make them vegan but decided to chuck an egg in there, I think it would work fine without because the sweet potato goes quite sticky!)
75g buckwheat flour (use whatever flour you fancy)
Paprika, oregano, pink salt and pepper (again, shove in whatever herbs you fancy, I fancied them being quite plain today but you could make them curry flavour or spicy chilly flavour)
(Makes 4 - I had 2)
Steam your sweet potato until soft (not too soft) and then literally just mix all the ingredients together in a bowl.
As I just made this up on the spot I did think they needed something else in them as I was eating it - I think Parmesan would be great to give them a more salty and sticky consistency. So I’m defo going to try something like that next time! But either way here’s a little idea for you when you don’t have a lot going on in the fridge 😅

I had them with a combo of giant cous cous cooked in veg stock, courgette, green beans and cherry tomatoes❤️ (would also be banging in a bun!)
