Sweet potato nachos🍠🥑

One of my fave plant based dishes!
I absolutely love this one. When you’re craving nachos and milkshakes at the cinema..but you can’t leave the house🙃
Try this delicious healthy and FUN dinner this week!

It’s pretty relaxed and you can put whatever you want on the nachos as a topping! I finely sliced 3 sweet potatoes (which made 400g) spread out across 2 baking trays if possible and bake for 20 minutes (I swapped the trays around half way through to make sure they were all baked evenly!)
Once they’re done put them all on one tray and top with whatever you fancy!
I added vegan mozzarella and put it under the grill for a few minutes before adding;
Tomato salsa (200g tomatoes, one garlic clove, 1/2 lemon juice, handful parsley, drizzle olive oil, salt and pepper - roughly blended)
1/2 avocado
Fresh coriander
Fresh lime
A yoghurt dressing (alpro Greek yoghurt mixed with 1/2 lime juice, a dash of water, drizzle olive oil, pink salt and pepper)

I had mine with a protein smoothie on the side as the nachos alone aren’t very high in protein. For this I used;
1 scoop vegan vanilla protein
1/2 frozen banana
50g frozen mango
200ml coconut milk
150ml water
Tsp peanut butter
SUCH A GOOD COMBO. A really healthy balanced meal as well! Enjoy!
