Satay tofu🧡


Just putting it out there, I think I actually prefer tofu satay to chicken satay 😍 just love the texture of tofu and I find it so much easier to digest! I had this yesterday for a super quick lunch (again, using up the remains of my fridge, should really go food shopping😂)

Ingredients;
140g tofu
10g cornflour
1/2 bag basmati rice (125g)
The sauce;
15g smooth peanut butter
30ml boiling water
5g soy sauce
1/2 lime juice
5g honey
50ml coconut milk (I used alpro)

Cut your tofu into cubes and lightly dust in cornflour, cook on a frying pan for a minute or so on each side of the cube.
Meanwhile combine your sauce ingredients together (don’t worry about weighing each quantity, I weighed it just to post the recipe but just throw a bit of each in a small bowl)
Once each side of the tofu is browned, put your rice in the microwave and then pour your sauce into the pan. Add another dusting of cornflour over the pan with the tofu and the sauce and mix it all together. Once the rice is done, place your tofu on top and then pour over the thick sauce. I added another drizzle of honey, some sesame seeds and some fresh coriander on top🤗
