Vegan Shepard’s Pie🥧😍

Whether you’re vegan or not this is definitely one to try!
An absolute fibre and micronutrient overload, but still hearty and delicious😍 honestly lentils are just the best meat alternative in my opinion!
To be honest you can throw whatever you want in a saucepan, put it in an oven dish, top it with potato and shove it in the oven, as long as lentils are your king ingredient it’ll work😅
I used (serves 4)
1/2 onion
3 cloves garlic
Tsp dried thyme
Tsp dried oregano
1/2 orange pepper
1/2 red pepper
One punnet of chestnut mushrooms (200g)
1 tin chopped tomatoes (400g)
1 organic vegetable stock cube
400g puy lentils (I used 1 & 1/2 Merchant Gourmet cooked puy lentil pouches)
1 tsp marmite
50ml Henderson’s relish (or Worcestershire sauce)
For the top;
3 white potatoes
Dash almond milk (or milk/butter whatever you like in ya mash)
Salt and pepper

Pretty much make it like you’re doing a bolognese, there was no particular method but add the ingredients to the pan in the order I’ve listed above 😅 sauté the onions and garlic, then add the rest of the chopped vegetables bit by bit. Once you’ve added the chopped tomatoes and lentils leave to simmer for 10 minutes, do this at the same time that you boil your potatoes for the mash (so peel them, chop them and boil for 10/15 mins) then just put the lentils in an oven dish and top with the mash! I baked it for 25 minutes and left to stand for 5 before serving. Would be nice with some brocolli/greens but I didn’t have any 🙃
